Sweet Maki Sushi

Ingredients

For two or three people

  • 2 kiwis
  • 2 avocados
  • 400g sushi rice
  • 130 ml of sushi rice vinegar
  • 500 ml water
  • 3 teaspoons of sugar
  • 1 teaspoon of salt
  • 4 king prawns
  • 4 endive leaves
  • Goat's ricotta or other soft cheese, to taste.
  • Wasabi in pasta, as you like it.
  • Soy sauce to taste

Preparation

Rinse the rice with cold water until clean, let it sit in the water for 10 minutes then cook, drain and let it rest in a hangiri or ceramic bowl. Heat the rice vinegar, dissolve the salt and sugar and allow to cool. Gradually pour the liquid over the rice, stir well and cover with a damp cloth. Put the water on the stove and plunge the prawns in as soon as it starts to boil, cook for 15 minutes, in the meantime wash the escarole, dry it and roll it up, prepare an avocado carpaccio and kiwi triangles. Wet your hands with fresh water and spread about 100 grams of rice on a sushi mat until you have an elongated rectangular shape. In the centre, place a langoustine, the rolled escarole leaf and the cheese. Roll the rice around the ingredients, pressing well to obtain compact cylinders. Wrap them in the avocado carpaccio, cut them with a sharp knife dipped in cold water, garnish with a bit of cheese, the kiwi triangle and serve.
