Oat flour crêpes with red kiwi and Greek yogurt

Ingredients

  • 250 g oat flour
  • 500 ml of milk
  • 3 eggs
  • Butter, as needed, to grease the pan
  • 4 red kiwis Jingold
  • 6-7 yellow Jingold kiwis
  • 250g Greek yogurt
  • 2 tablespoons of icing sugar
  • 4 passion fruits
  • 2 bananas
  • 1 handful of dried coconut
  • Fresh mint to taste
  • 1 lime

Preparation

Oat crepes are a tasty alternative to classic crepes, made with oat flour instead of the more common 00 flour. Here is how to prepare them once you have gathered all the ingredients: in a bowl, beat the eggs with the milk at room temperature using a whisk. Add the flour by sprinkling, stirring continuously to prevent lumps from forming. Allow to rest for 30 minutes at room temperature. After this time, grease a pancake pan or non-stick frying pan with very little butter and pour in a small ladle of batter, distributing it evenly while rotating the pan. Cook the crêpes over a medium heat for 1 minute, then turn to the other side and continue cooking for the same amount of time. As the crepes are cooked, stack them on a plate until the batter is used up. In a bowl, mix the Greek yoghurt with the icing sugar. Use this mixture to fill the crepes and top with sliced red kiwi, dried coconut, sliced bananas and passion fruit pulp. Decorate the crepes with fresh mint and lime wedges and serve immediately.
