Ingredients
for 4 people
- 4 kiwifruit
- 8 strawberries
- 4 sprigs of mint
- 2 dry biscuits of your choice
- ½ glass of soya milk
- 250 ml liquid soy cream
- 2 tablespoons of icing sugar
Preparation
Wash the fruit and mint sprigs. Dice the kiwi and blend it with a tablespoon of icing sugar until a cream is obtained, adding a little soya milk if necessary. Slice the strawberries, keeping 4 aside for decoration. Whip the soya cream with a tablespoon of icing sugar until stiff peaks form. At the bottom of a low tumbler, create a base with a tablespoon of cream, then slowly pour in the kiwi cream, taking care not to mix the two layers. Place a biscuit, lightly dipped in soya milk, on top, then pour over the cream and strawberry pieces. Chill in the refrigerator for 30 minutes, then garnish with strawberries and mint leaves and serve.
