Ingredients
per 10 tartlets
- 3-4 king prawns
- 1 golden kiwi
- 1 red kiwi
- 1 green kiwi
- 1 tablespoon of crème fraîche
- olive oil
- Salt and pepper
Preparation
Shell the prawns, leaving the final tail on, then make a slit down their backs and remove the dark intestinal tract. Cook them in a pan with a little oil for 2 minutes, seasoning with salt. Peel and dice the kiwis, then combine them in a bowl. Serve the prawns with the kiwi tartare, seasoning to taste with crème fraîche, a sprinkle of pepper, and fresh herbs as desired.
