Ingredients
- 4 salmon fillets
- 1 grapefruit
- 1 blood orange
- 1 sweet orange
- One handful of baby spinach
- 3 yellow kiwis
- 2 tablespoons shelled pistachios
- 1 avocado
To dress the salad:
- 2 tablespoons of olive oil
- juice of 1 lemon
- 1 shallot, chopped

To season the salmon:
- 2 tablespoons of strained orange juice
- 2 tablespoons of olive oil
- 2 teaspoons of Dijon mustard
- 1/2 clove of garlic

Preparation
Start from the Salmon fillet glazeIn a small bowl, whisk together the olive oil, orange juice, mustard, salt, pepper, and crushed garlic pulp.
In a second bowl, prepare the salad dressing: whisk together the olive oil with the lemon juice, salt, and pepper, and also add the shallot. Peel the citrus fruits with a sharp knife and then cut them into thin slices. Remove the pips and set aside.
Place the salmon fillets in a baking tray lined with baking paper and season with a drizzle of olive oil, salt, and pepper. Cook in the oven at 180°C for about 15 minutes. Remove from the oven and glaze with the sauce.
In a bowl, prepare the salad: combine the baby spinach, citrus fruits, roughly chopped pistachios, peeled and sliced kiwi, and avocado. Dress with the emulsion and mix. Transfer the salmon fillets to serving plates and top with the citrus, kiwi, and spinach salad.
